The King Cake Tradition
The South Louisiana tradition of celebrating Mardi Gras is known throughout the world. Along with the Mardi Gras balls and parades, the sharing of king cakes has become a major ingredient of the Mardi Gras season.
The Mardi Gras season actually begins on January 6, the Feast of the Epiphany or the Twelfth Night. This is the night the three kings arrived with the gifts for the Christ Child. The season continues on through Fat Tuesday, the day before Ash Wednesday. Mardi Gras day is the final celebration before the Christians begin the lenten season.
King Cakes were first associated with Mardi Gras by the Twelfth Night Revelers of New Orleans during the 1870 celebration. A King Cake with a golden bean inside was sliced among the ladies of the court, and the woman whose slice contained the bean was crowned Queen of the Festivities.
Most King Cakes contain plastic babies and tradition has it that the person receiving the slice with the baby inside is obligated to buy the next cake. We at Keller's Bakery of Youngsville believe not only in wholesome tradition, we also believe in fine eating. Each King Cake is individually made from a flaky Danish pastry, filled with our own specially made fillings, hand rolled, proofed, baked, and iced using only quality ingredients. We decorate each cake with the traditional Mardi Gras colors of purple for justice, gold for power, and green for faith.

For safety reasons, we will no longer bake a baby inside the king cake. There will be a baby inside the box that you can insert by taking a knife and making a small incision on the underside of the cake and inserting the baby. Since there is a foreign object in the cake, caution should be used when eating the product, especially with children.
